Traditional methods for processing meat in Niger

Kilishi is made from strips of dried beef that are coated with a sauce and grilled. It is widely consumed in Sahel African countries. The small-scale techniques for making kilishi in Niger are described and its quality is evaluated using the consumers' criteria. From an economic analysis, problems in processing are limiting marketing. Proposals are put forward to increase yields and improve quality (résumé d'auteur)
