In order to improve the production of aromatic rice in Camargue, we conducted research works to create new aromatic varieties through recurrent breeding and to evaluate the effect of salinity on aromatic quality. S1-S2 lines from the recurrent breeding program proved to have a better aromatic quality than F3 line obtained from conventional breeding. We observed a global positive effect of salinity on aroma with differences in varieties' response. In our conditions, increase of aromatic quality with salinity is partially linked to decrease in grain weight.
